To 可可, 淡忌廉 = 35% whipping cream. No need to use sugar to whip the cream ga. And I didn't use 蒸嫩豆腐, I used no sugar 豆腐花. 'coz 豆腐花 is more smooth. Also this recipe make a 6" cake.
To 可可, one tips for step 5. 'coz I fail that step so many times before. 'coz for some reason (or maybe it's just me) 魚膠水 will make the 芝士糊起粒粒. So follow the step below is better:

豆腐芝士凍餅
忌廉芝士 70克
百福蒸嫩豆腐 180克
糖 25克
魚膠粉 7克
淡忌廉 120克
製作:
(35g溶牛油+70g消化餅碎做餅底)
1. 豆腐先用熱水拖一拖,並且用kitchen paper吸去多餘水份
2. 忌廉芝士加糖打至軟身
3. 加豆腐入芝士糊中攪勻
4. 打起淡忌廉至6-7成企身(6-7成便夠,若打得太企身蛋糕會不夠滑)
5. 用水攪勻魚膠粉,再座熱水至無粒溶解.之後快手加入芝士糊中攪勻
6. 加入打起之忌廉入芝士糊攪勻
7. 倒入模中再雪兩小時便成

魚膠粉加水拌勻, 用熱水座至溶, 稍為冷卻後, 放入幾少匙入芝士糊, 攪勻混合,將混合的魚膠水加入做好的芝士糊快手攪勻, 我試過幾次都唔起粒粒
