今日天氣報告。。。

今日嘅天氣同我嘅心情係一模一樣。。。

今早雖然有D凍﹐但都陽光普照。 中午時份開始天陰密雲﹐下午放工時終於落雨了。

越近放工﹐就越多麻煩事。 放工時心情已經去到谷底。

雨﹐總會有停嘅一日。

麻煩事﹐都應該會有解決嘅一天。

我默默祈待雨停嘅一日。。。

Applesauce Coffee Cake

Ingredients:

For Loaf

1/2 cup vegetable oil
1/2 cup sugar
1/3 cup light brown sugar, packed
1 x whole large egg
1 large egg yolk
2 tsp vanilla extract
1 cup unsweetened applesauce
1 2/3 cup pastry flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp ground ginger

For Streusel

1/2 cup light brown sugar, packed
2 tbsp all purpose flour
2 tsp ground cinnamon
2 tbsp unsalted butter, melted
1 cup walnut pieces, lightly toasted

Directions:

Preheat oven to 350 °F and grease and flour a 9-x-5-inch loaf pan.

For loaf, whisk vegetable oil, brown sugar, sugar, whole egg, egg yolk and vanilla until smooth. Stir in applesauce. In a separate bowl, sift flour, baking powder, baking soda, nutmeg and ginger and stir gently into applesauce mixture.

For streusel, combine brown sugar, flour and cinnamon. Stir in melted butter and walnut pieces and toss to coat.

Spoon half of the applesauce batter into prepared loaf pan and sprinkle with half of the streusel. Top with remaining batter and sprinkle remaining streusel to finish. Bake for 40 to 50 minutes, until a tester inserted in the center of the cake comes out clean. Cool loaf for 20 minutes, before turning out on a rack to cool completely.

日式芝士蛋糕

材料: (18cm模)
忌廉芝士165克
檸檬汁半個
蛋黃2隻
牛奶165克
砂糖35克+70克
牛油40克
低筋麵粉65克
淡忌廉80克
蛋白5隻
   
做法 :
1. 焗爐預熱至170C;
2. 忌廉芝士、雞蛋置室溫中退冰備用;
3. 忌廉芝士、牛奶、牛油及砂糖35克同置入煲中用慢火煮至材料完全溶解;
4. 將麵粉加入1.中慢慢攪至濃稠狀,順序加入檸檬汁及蛋黃拌勻;
5. 淡忌廉用打蛋器打至企身後,加入麵糊中混合。蛋白打至起泡後加入70克砂糖再打至企身(乾性蛋白或稱蛋白糖霜),分三次拌入(3)的麵糊中攪勻,倒入蛋糕模中;
6. 蛋糕模坐於注入熱水的焗盆中,以170C蒸焗40分鐘即成。

感恩節假期嘅第二日﹐一早約好老友棋子餅參加 "Thornhill/Richmond Hill/North York 一日遊"﹗ 一日遊之後﹐實在太攰﹐又休息一日﹗
感恩節假期嘅第三日﹐用左一日時間幫個衣櫥換季。 之後又有精彩嘅hockey同basebell﹗ 睇完後﹐已經無心機寫blog﹗

佢同我講話會加我人工﹐ 係我好高興之際﹐ 我發覺我係每個鍾頭加左$0.45, 即係每日賺多$2.88(after taxes)﹗﹗

雖然加左人工同無加﹐真係無乜分別﹗﹗ 但其實都有D開心嘅﹐都算係公司對自己嘅少少獎勵。 Keep up the good work﹗﹗﹗ 我要加油﹗﹗﹗

星期一。。。

一星期最唔鍾意星期一。 剛剛放完weekend﹐ 又離下個weekend最遠﹗ 每個星期一嘅早上﹐ 我都睡眼惺忪﹐呆坐辦工臺前。 下午過後﹐ 心情才有點好轉。 又4個鍾頭後﹐終於放工了﹗

我每個星期一都係o甘過。 基本上productivity = 0﹗ 只係個人係到﹐靈魂完全出竅﹗

究竟我幾時先至會有個清醒嘅星期一!? 幾時...

Soft and Chewy Chocolate Chip Cookie

Ingredients:

- 2 1/4 cups of flour
- 1 tsp. of baking soda
- 1 cup of soft butter
- 3/4 cup of brown sugar
- 1/4 cup of white sugar
- 1 instant vanilla pudding pack.
- 2 eggs
- 1 tsp. of vanilla
- 2 cups of chocolate chips
- 1 cup of nuts (optional)

Instructions:

Preheat oven to 350 degree F.

Cream together the butter, brown and the white sugar. Then add the pudding powder into the mix. Add the eggs and vanilla. Gradually add the flour that was mixed with the baking soda. Finally, add the chocolate chips and the optional nuts. Stir well. Place dough at least 2 inches apart on the oven sheet.

Bake from 10 to12 minutes. The sides of the cookies must golden a bit before taking out of the oven. Let cool for a few minutes.

檸香芝士餅

材料:
忌廉芝士250g
忌廉220g
魚膠粉3茶匙
水3湯匙
雞蛋1隻
糖80克
檸檬汁5茶匙
消化餅140g
牛油溶液60g

做法 :
1. 忌廉打發起,放入雪櫃待用。
2. 消化餅弄碎,加入溶化牛油拌勻,放入8吋餅盆內壓實。
3. 用碗盛載魚膠粉,用水調勻,座於熱水上,使其溶掉。
4. 忌廉芝士用打蛋機打至滑,加入蛋黃,糖打勻。
5. 加入魚膠粉水和檸檬汁拌勻。
6. 加入忌廉再拌勻。
7. 蛋白打至企身,加入上述芝士材料中,然後倒入餅盆內。
8. 放入雪櫃雪至凝固。

今日整左呢個檸香芝士餅。 本來雪右6個鍾頭後﹐見佢都唔太凝固﹐ 以為失敗左。 於是我把心一橫﹐ 放入冰箱﹗ 雪多2個鍾頭後﹐結果。。。 非常好味﹗ o的口感好似雪糕咁﹐冰冰凍凍﹐入口即融。 朋友J更提議係食嘅時候,將佢切成細細粒嘅‘一口芝士餅’。 由失敗變成功﹐為此﹐我又開心了一天﹗
