2 cups All purpose flour 1 1/2 tsp baking powder Pinch salt 1/3 salted butter, softened 1/2 sugar 1 egg 1 tsp vanilla 1 1/2 cups berry yogurt 1 tsp baking soda 1/2 cup fresh or frozen blueberries 1/2 cup fresh or frozen strawberries
(I didn't use blueberries)
In large bowl, whisk together flour, baking powder and salt; set aside.
In another bowl, using an electric mixer, beat together butter and sugar until creamy. Beat in egg and vanilla unti combined. Using wooden spoon, stir in yogurt and baking soda. Pour over flour mixture and stir until some streaks remain. Add blueberries and strawberries and stir until combined well.
Fill 12 lined or greased muffin cups with batter. Bake in center of 375F (190C) oven for about 25 mins or until golden and cake tester inserted in center comes out clean.
