綠茶慕斯蛋糕A. 消化餅..........5塊 淡牛油..........30g B. 淡忌廉..........160g 糖.................20g 綠茶粉...........7g 水.................40g 魚膠..............6g C. 蛋白..............1隻 糖..................20g 預備: 1.魚膠粉加適量水,隔熱水座溶,待涼. 2.綠茶粉加水,拌勻. 做法: 1.A份消化餅壓碎,加入牛油溶液伴勻,壓實於蛋糕模內雪凍備用. 2.C份蛋白打至起泡,加入糖,打成忌廉狀,備用. 3.B份淡忌廉加糖打至軟身,拌入綠茶溶液. 4.魚膠溶液先拌入少量綠茶忌廉,才倒進綠茶忌廉內拌勻. 5.將已拌勻的綠茶忌廉倒入已打發蛋白,輕輕拌勻. 6.將綠茶忌廉倒進蛋糕模內,放入雪櫃凝固. 7.脫模後裝飾便成.食譜來源 : http://www.leisure-cat.com/forum/viewtopic.php?t=35115
